The leaf vegetable moloheya is traditionally called the national dish of Egypt and is well known across the Middle East and Northern Africa. Mention moloheya to anyone from this region and it prompts fond memories and an outpouring of stories about home.

Using this common experience, artists Haim Ben Shitrit and Jonathan Swain spent their month long residency at Fabrica cooking, eating, comparing recipes and sharing stories about this dish with Brighton & Hove residents from Syria, Palestine, Sudan and Egypt. They also introduced this highly nutritious food to other local people, a subtle, long term bid to extend Jamie Oliver’s range of ingredients.

This video was commissioned as part of Say Aah, a Brighton and Hove Council initiative that aims to stimulate debate around the role that arts can play in the health of individuals, communities and cities. Supported by Bi-arts.
